  • Astonishingly poor durability
By Rising Crust on 13 April 2018

I bake every day, so it is likely that in the short time that I have owned this, I have used it beyond its projected life span. I received this baking tray on March 5, and commenced baking. As of last week, baguettes began to stick. Today, the pan would not release the bread, so I released the pan. The baking tray and bread were launched with great vigor over the fence in my backyard. Why on earth did I give it three stars, you ask. When used within its limitations, it's a handy bit of cookware. It was a welcomed crutch that helped me perfect my technique, but I no longer need it or the aggravation of its marginal durability. If you are a casual bread baker and wish to experiment with baking baguette, this tray can be quite handy in helping you deal with the fragile, high hydration dough you will produce. The tray, however, will not stand up to high frequency baking cycles or a harsh cleaning regimen. View it as a set of training wheels to get you rolling down the road. When it fails you, let nature have it. It will rust back to its elemental constituents in no time.

  • Not the best baking results
By Little Red Hen on 24 May 2018

I don't love this baking pan. The over hanging edges catch on the oven racks making it difficult to rotate in the oven. The shiny metal did not produce a puffed madeleine as compared with Bellemains madeleine pan, as I baked them side by side. I recommend Bellemains 12 ct. madeleine pan in lieu of this one.

  • I finally feel like a Parisian
    By C on 10 January 2018

I impulsively bought this pan because I had to make madeleines for a little fête in my french class. The pan works well and madeleines come out great.

(pro-tip: I don’t know if the pan claims to be nonstick. either way, don’t listen to that. smear a little butter before pouring madeleine batter. those puppies will come out more golden than someone falling asleep while tanning in Cancún)

  • The correct choice for authentic Madeleines
By Kimo on 14 May 2015

If you want to make actual French Madeleines, these are the pans for you at a reasonable cost. Does not over brown like non stick pans. The pans work perfectly. Brush the molds with Beurre du Commercy, a mixture of 2 tbs melted butter and a tbs of Flour wiping away any pooled butter. This will allow the Madeleine's to release from the molds by turning upside down and rapping on the counter. The pans went through the dishwasher without problems. Also, a hint. Use the Julia Child recipe, real pure vanilla extract, and fresh orange or lemon zest to avoid making those horrid fakes sold commercially.

  • Madeleine Pan
By Amazon Customer on 24 November 2019

This is my second Madeleine pan by this manufacturer. I have an older purely aluminum Madeleine baker but the newer non-stick model is preferable. I would, nevertheless, continue to use a light coating of butter in the mold. Your cookies will slip out without any difficulty.
