    The Paderno World Cuisine 2 quart single-handled unglazed clay cooking pot with lid weighs a surprising 1.7 pounds. Clay pot cooking is a technique of cooking food in an unglazed clay pot which has been soaked in water so as to release steam during the cooking process. This technique has a long history, stretching back at least to ancient Roman times, and is commonly used in several cuisines in Africa, Europe and Southeast and East Asia. Typically, the pot is submerged for 15 to 30 minutes to absorb water before cooking, then filled with the food and placed into an oven. As the pot warms it releases the water as steam. The food is surrounded by steam, creating a tender, flavorful dish. The evaporation of the water prevents burning so long as the pot is not allowed to heat until it is completely dry. Unlike boiling, nutrients are not leached out into the water. Clay pot cooking requires lower oven temperatures and longer cooking times than traditional roasting with dry heat. Clay pots may be cleaned by scrubbing them with salt. Soaps or detergents should not be used because the clay may absorb them. It has a diameter of 7 1/2" and a height of 4 3/4".   • Hard to find Chinese claypot.

    It's rather hard to find these, even online, so I was glad to find them on amazon but a bit dismayed at the poor ratings. I decided to ignore the reviews and ordered 4 of the 1 quart sized pots, upon arrival 3 of the pots were in perfect condition and 1 was chipped and broken. The 1 quart size was exactly what I expected, perfect for a very large single servings of a dish. If you want to serve more than two people you will need the 3 quart size. I like the smaller size as it is a fun and great way to serve a dish, it's attractive, cuts down on dishes, and the claypot keeps the food piping hot for a long time.

    I soaked the pots overnight and the next night cooked a hong kong style clay pot dish with chinese sausage, chicken thighs, and bok choy. The results were fantastic. Great flavor, tender, and with all the crispy bits of rice at the bottom you expect with a claypot dish. These are a fantastic way to expand your Chinese repertoire beyond stir frying and are a fun and attractive way of serving a dish for yourself or others.

  • Does not measure up. False advertising!

    Ok I have not used it yet but I feel as I have been ripped off by false advertising. This pot is really really small.
    I filled it up with a measuring cup and managed to get 12oz into it.
    The description calls it 20oz also calls it 1 quart and yet also calls it 2 qt.
    The one I got is less than all.

  • Not Great at all

    This pot came chipped in 2 places on the lid....and that's not really a reason to rate it low for the actual product but the size is very deceiving. I even checked the measurements when I got it to make sure I ordered the right one as there were several sizes. It is much, much smaller than the size it appears or it says on the description. Thank God it was damaged so I was able to send it back without paying shipping because I would have even if it wasn't chipped and i neveer do that for just not really liking something. Not even worth the sale price I paid for it which at the time, I thought was a great price. No wonder it was marked down so much...this should have been a sign!!

    This is a follow-up to my original review. I thought the lid of the second pot I received was intact, but as soon as I put it into water to soak it, two good-sized chips showed up on the edge.
